If you have never had Detroit-style pizza, let me put you on. It’s a thick (deep dish), rectangular pan pizza with the cheese pushed all the way out to the edges so it caramelizes into the most delicious crispy, buttery crust with the sauce spooned right on top. Crunchy edges, soft airy middle, absolute perfection…. and for the longest time, it felt completely off-limits for those of us who are gluten-free.
One quick but important note for this one, because Detroit-style is genuinely tricky to pull off gluten-free. Both of the spots below make their gluten-free crust with wheat starch, which is processed to remove the gluten, but that means neither option is safe for anyone with a wheat allergy. Both are also shared kitchens rather than fully dedicated gluten-free spots, but both have genuinely excellent cross contamination protocols, so tell them what you need and they will take great care of you! Their Detroit-style pies are the real deal, with Wisconsin brick cheese spread all the way to the edge for that crispy frico crust, a light and airy crumb, and sauce right on top, and all made gluten-free!
